A rare way to eat Touji Soba in Izu
Touji soba is eaten in some areas of Shinshu (Nagano Prefecture).
It is said to be called touji soba because the soba is "thrown" into an iron pot in which seasonal vegetables are simmering in soba soup.
The soba noodles served at Washoku Haruka are flat noodles. Should they be called kishimen style or fettuccine style?
Touji soba is often made using regular soba noodles, but we aimed to make soba that is more traditional and enjoy the texture and aroma of soba, and arrived at flat noodles.
Put the soba noodles in a colander and boil them in a pot.
*The soba noodles are already boiled, so it's fine to just heat the noodles until they are hot.
Put the soba noodles, ingredients, and soup into a bowl and enjoy.
