This is a cafe that serves bread and gelato, overseen by Chef Atsushi Hatae of "Atsushi Hatae," which has three stores in Tokyo .
CALM means "calm" or "quiet" in French.
In order to bring out the flavor, texture, and taste of the ingredients,
we pursue true deliciousness with the free-spirited imagination that only a pastry chef can have.

Chef Patissier
Born in 1981 in Hokkaido.
After graduating from a culinary school in Hokkaido, he began his training at a famous patisserie in Sapporo.
He then joined the famous Le Jardin Bleu in Tama City, Tokyo.
In 2007, he joined “Alain Ducasse Group”and served as Chef Patissier in Tokyo and Osaka before moving to France in 2014.
In 2014, he moved to France, where he worked at Le Meurice and Hotel Plaza Athénée in Paris.
In 2015, he returned to Japan and became Chef Patissier at Dominique Bouchet Tokyo.
In 2019, he launched “Atsushi Hatae”.
